Falafel with tahini and fresh salad
Ingredients
for 2 people
- 160g - Chickpea falafel
- 4 tablespoons of tahini
- 1 lemon, juice
- 1 clove of minced garlic
- 1 cucumber
- 2 tomatoes
- 1 red onion
- 1 bunch of fresh parsley
- 2 tablespoons of extra virgin olive oil
- just enough water
- just enough salt and pepper
Preparation
In a bowl, mix the tahini, lemon juice, minced garlic and a little water. Add water little by little until you get a smooth, creamy sauce. Ad as much salt as needed.
Prepare the salad: Cut the cucumber, tomatoes and red onion into cubes. Finely chop the parsley. In a large bowl, mix all the vegetables with the lemon juice, olive oil, salt and pepper.
Heat the Liveg falafel: heat them in a pan or in the oven at 180° for 3-4 minutes.
Serve the falafel hot with the tahini sauce and fresh salad. You can accompany with pita or wholemeal bread for a complete meal.
