Rice Salad with Cherry Tomatoes and Basil Tofu
Ingredients

- 300g of rice
- 100g of cherry tomatoes
- 70g of pitted olives
- 1 tablespoon of desalted capers
- to taste extra virgin olive oil
- to taste pepper
Preparation
Cook the rice in plenty of salted water for the time indicated on the package to achieve an al dente cooking.
Meanwhile, wash the cherry tomatoes and cut them into quarters.
Transfer them to a bowl together with the desalted capers and olives.When the rice is ready, drain it and cool it with cold water to stop the cooking process.
Then, add it to the vegetables.Add the Tofu with basil biolaband mix well.
Season everything with pepper and a drizzle of raw olive oil.Let it rest in the refrigerator for at least half an hour before serving.
