scrambled tofu with turmeric, carrots and courgettes
Ingredients
for 4 people

- 2 courgettes
- 2 carrots
- 1 onion
- to taste turmeric
- to taste salt, pepper, extra virgin olive oil
Preparation
Chop the onion and fry it in a pan with oil.
Add the carrots and courgettes cut into small cubes.
Continue cooking until the vegetables are cooked but crispy.
Add the crumbled tofu and turmeric.
Stir and keep cooking until the tofu turns golden brown.
Serve with rice or in a wrap.
