Baked tofu with vegetables
Ingredients
for 4 people

- 80 ml lemon juice
- 2 cloves garlic
- 600 gr Brussel sprouts
- 2 carrots
- 80 gr pecan nuts
- 1 handful dried cranberries
- 2 tablespoons balsamic vinegar
- 6 tablespoons extra virgin olive oil
- to taste: rosemary, thyme, salt and pepper
Preparation
In a bowl, mix rosemary with salt and pepper, add chopped garlic, oil and lemon juice.
Cut the Biolab Natural Tofu as desired (triangles, cubes, slices) and sprinkle it with the marinade.
Let it rest for at least 1 hour in the fridge and turn it often.Cook it in a hot pan for about 5 minutes until golden brown or bake it in the oven together with the vegetables.
Cut up the vegetables and mix them with oil, balsamic vinegar, rosemary, thyme, salt and pepper.
Bake them in the oven at 200° for 20-25 minutes, until they have softened.
Add nuts and cranberries before serving.
