Baked tofu with vegetables

Ingredients
for 4 people

  • Prodotto Biolab
    2 packages - Natural tofu
  • 80 ml lemon juice
  • 2 cloves garlic
  • 600 gr Brussel sprouts
  • 2 carrots
  • 80 gr pecan nuts
  • 1 handful dried cranberries
  • 2 tablespoons balsamic vinegar
  • 6 tablespoons extra virgin olive oil
  • to taste: rosemary, thyme, salt and pepper

Preparation

  • In a bowl, mix rosemary with salt and pepper, add chopped garlic, oil and lemon juice.

  • Cut the Biolab Natural Tofu as desired (triangles, cubes, slices) and sprinkle it with the marinade.
    Let it rest for at least 1 hour in the fridge and turn it often.

  • Cook it in a hot pan for about 5 minutes until golden brown or bake it in the oven together with the vegetables.

  • Cut up the vegetables and mix them with oil, balsamic vinegar, rosemary, thyme, salt and pepper.

  • Bake them in the oven at 200° for 20-25 minutes, until they have softened.
    Add nuts and cranberries before serving.
