Vegan tofu curry
Ingredients
for 2 people

- 200 ml coconut milk
- 1/2 onion
- 1 garlic clove
- 2 teaspoons curry powder
- 1 teaspoon turmeric
- 1 cm fresh ginger
- to taste salt, pepper, olive oil
- to accompany basmati rice
Preparation
Sauté the onion and garlic in a little oil.
Add curry and turmeric and mix well, then add grated ginger.
Add the cubed tofu and let it saute for a few minutes.
Add the coconut milk and let it cook for about 20 to 30 minutes.
If the sauce reduces too much, add some water.Add salt and pepper to taste and serve with basmati rice.
